Spinach with chickpeas

INGREDIENTS

  • 2 cups spinach
  • 1 cup cooked garbanzo beans
  • 2 tbsp GOYA® Garlic Extra Virgin Olive Oil
  • 4 cloves of garlic
  • 4 slices of bread
  • 0.25 tsp paprika
  • 0.25 tsp ground cumin
  • 0.25 tsp white pepper
  • 0.5 cup tomato sauce
  • 1 tbsp vinegar
  • 1 cup water
  • salt to taste

PREPARATION

Rinse one cup of cooked chickpeas to remove excess salt.

Now, in a frying pan, add a good splash of GOYA® Garlic Extra Virgin Olive Oil and when it is hot, add the peeled garlic and bread crumbs to brown them.

Next, mash the garlic and bread together with the paprika, cumin, white pepper and tomato sauce. Add a tablespoon of vinegar diluted in a cup of water to the blender.

Meanwhile, cook the spinach in a pot of boiling water and when it is white, drain the water and mix it with the chickpeas.

Now, add the chickpeas, spinach and the mixture of bread, garlic and spices in a frying pan. Stir everything together for a few minutes to integrate the flavors and add salt to taste.

Remove from the heat and serve this delicious traditional Andalusian dish.
