Chicken tortilla soup recipe!

INGREDIENTS

  • 2 tablespoon Organics Extra Virgin Olive Oil
  • 1.5 cups white onion chopped into cubes
  • 2 tablespoon chopped chives
  • 1 tablespoon chopped cilantro
  • 2 chopped jalapeños with the seeds removed
  • 4 crushed garlic cloves
  • 1 tablespoon ground paprika
  • 1 tablespoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon sugar
  • 6 tomatoes
  • 2 cups chicken or turkey stock
  • 2 cups tomato juice
  • 2 chicken or turkey breasts
  • 0.5 cup lemon juice – from 2 large lemons
  • 0.5 teaspoon salt and pepper
  • 2 advocados
  • 4 tortillas for chips

PREPARATION

In a large pot, heat the oil and add the chopped onion, chives, chopped cilantro, jalapeños, crushed garlic, ground paprika, cayenne pepper, oregano, sugar, salt and pepper. Mix all the ingredients together and cook on a low heat for 10 minutes.

Then, add the tomatoes, leaving the mixture to cook for another 10 minutes.

Next, add the chicken stock, tomato juice and chopped chicken, cooking all the ingredients on a medium heat for 10 minutes.

Finally, add the lemon juice, season with salt and pepper and remove from the heat.

Serve in bowls with grated or chopped cheese, tortilla chips, avocado, cilantro and slices of lemon.
