Braised Pork Loin with Sweet Potatoes & Rosemary

INGREDIENTS

  • 1.5 lbs Pork Tenderloin
  • 1 lb yellow sweet potato
  • 1 lb purple sweet potato
  • 2 sprigs of fresh rosemary
  • 1 Pinch of salt
  • 1 Pinch of pepper
  • 0.5 cup GOYA® Unico Extra Virgin Olive Oil

PREPARATION

Add salt & pepper to the pork loin and tie with a cotton thread to give it a cylindrical shape.

In a large pan, heat 1 Tbsp. of Goya Unico Extra Virgin Olive Oil & brown all sides of the loin. Set aside & reserve.

Peel the 2 varieties of sweet potatoes and cut them into approximately 1-inch cubes.

Add salt & pepper to the cubed sweet potatoes and add freshly chopped rosemary.

Place the pork loin and sweet potatoes on a baking sheet and place in a preheated oven at 380 F° for 35 min.

Before serving, add a touch of Goya Unico Extra Virgin Olive Oil on top.
