Andalusian Gazpacho

INGREDIENTS

  • 1 kg pear tomatoes
  • 1 green pepper
  • 0.5 cucumber
  • 1 clove of garlic
  • 5 tbsp GOYA® Garlic Extra Virgin Olive Oil
  • 2 tbsp vinegar
  • salt to taste
  • 3 pieces of day-old bread
  • 1 cup water
  • Toppings: chopped tomato, bell bell pepper and cucumber with a drizzle of GOYA® Garlic Oil

PREPARATION

Wash all the vegetables with plenty of water. Cut into small pieces the tomatoes, the bell pepper and peel and chop the cucumber. Do the same with the garlic.

Put all the vegetables in the blender.

Add GOYA® Garlic Extra Virgin Olive Oil, vinegar and salt. Blend everything until you see that the ingredients are well integrated and the cream is smooth.

Now, if you want to give it more consistency, you can add two or three pieces of white bread from the day before. Or, on the contrary, if you want it to have a lighter consistency, add a glass of water.

Whisk again, adjust the salt and serve when you see that the consistency is as desired.

Add chopped vegetables such as tomato, bell pepper and cucumber on top.
